
PLANT-BASED JERKY RECIPES: Coconut Cream Maple Bakon Cupcakes
INGREDIENTS:
- Cupcakes: (all ingredients are organic)
- 1/2 cup brown sugar
- 1/4 cup flour
- 1 tsp baking soda
- 2/3 + 1/4 cup almond milk
- 1/3 cup aquafaba (canned chickpea broth that works as an egg replacer)
- 1 tbsp white vinegar
- 1 tbsp vanilla extract
- 1 tsp maple flavor
- Coconut cream
- 1 can of refrigerated unsweetened coconut milk
- 1 tsp vanilla extract
- 1/3 cup powdered sugar
DIRECTIONS:
For cupcakes, blend all dry ingredients and wet separately, then combine in a large bowl and mix well. Pour into a lined cupcake pan and bake for 20 min. For the coco cream, open the can and scrape all the cream into a bowl (DON'T use the water that separates). Could you add all ingredients and place them in the freezer for an hour? Pipe onto cooled-off cupcakes once hardened. Chop up @unisoyfoods teriyaki jerky, drizzle maple syrup, and devour!
