PLANT-BASED JERKY RECIPES: Coconut Cream Maple Bakon Cupcakes

COCONUT CREAM MAPLE “BAKON” CUPCAKES!
INGREDIENTS:
  • Cupcakes: (all ingredients are organic)
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 tsp baking soda
  • 2/3 + 1/4 cup almond milk
  • 1/3 cup aquafaba (canned chickpea broth that works as an egg replacer)
  • 1 tbsp white vinegar
  • 1 tbsp vanilla extract
  • 1 tsp maple flavor
  • Coconut cream
  • 1 can of refrigerated unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1/3 cup powdered sugar

 

DIRECTIONS

For cupcakes, blend all dry ingredients and wet separately, then combine in a large bowl and mix well. Pour into a lined cupcake pan and bake for 20 min. For the coco cream, open the can and scrape all the cream into a bowl (DON'T use the water that separates). Could you add all ingredients and place them in the freezer for an hour? Pipe onto cooled-off cupcakes once hardened. Chop up @unisoyfoods teriyaki jerky, drizzle maple syrup, and devour!
